Dissolve the Mac Magic dry instant yeast in lukewarm milk and let it to stand, until it becomes foam.
Sieve the flour with soda , salt in a big bowl and make a hole in the middle
Put the yogurt, the eggs and the yeast mixture together. Knead, taking the flour little by little from around, until you get a dough softer than the bread dough
Grease a large plastic bag inside and put the dough inside
Close the bag but leave space to puff the dough and put it in the fridge.
After 1:30 – 2 hours the dough is ready to be baked into pancakes
Greasing your hands, so that the dough does not stick, make balls the size of a small mandarin and press them with the rolling pin into leaflets.
In a pan, warm the oil or the margarine and fry the pancakes on both sides.
Fry as many pancakes as you want and put the rest in the fridge.
These will last for a week
Serve hot with honey, jam (or sugar) and cinnamon
